How to make an almond muffin: a chef’s recipe

Wedding publishes a French almond financier recipe. The pastries themselves can be tasted in the Fouquet restaurants located in the Hotel Barriere Le Fouquets Paris. There they are prepared by Pierre Gagnier, owner of three Michelin stars.

Almond financiers are small, traditional French muffins. In French, financier means financier, and according to one of the legends, the baked goods were so liked by the financial workers of the business district of Paris that the chefs decided to name it after them.

Ingredients: butter (130 g), almond flour (70 g), wheat flour (60 g), sugar (145 g), egg white (3 pcs.), honey (20 g).

Cooking method:

1. Melt butter in a saucepan over low heat until brown (5-10 minutes). When cool, put in the refrigerator for a while.

2. Place almond flour in the oven for 20 minutes before use, then mix it with wheat flour, sugar and egg whites. Add ghee and honey to the resulting mixture.

3. Place the dough in small muffin tins and bake for 15-20 minutes at 165 degrees. Serve as a dessert with tea or coffee.
