Citrus compositions in perfumery are often called the Hesperides, after the Greek nymphs. They often contain fruits and plants with a pungent, cold scent of green foliage, tart juice (verbena, bergamot, lemon grass), and not so long ago, grapefruit and hassaku were added to them.
The ancestor of modern perfumery was cologne or Cologne water, which often contained citrus extracts. Today as it was then essential oils, which form the basis of fruit aromas, are obtained by cold pressing the leaves, flowers, and also the peel of tropical fruits.
